Rice Krispie Treat – No gooey, sticky mess here! Only delicious peanut butter, butterscotch, chocolate, and crisp rice cereal. While these may not by the traditional marshmallow, gooey Rice Krispie treats that you know, these are every bit as delicious, if not more so. The rice cereal provide a great vehicle for the chocolate, fudgey middle and the peanut butter and butterscotch together is such a nice pairing.

As soon as I saw these on Cara’s blog, I knew I would have to make them. And make them I did! They were the perfect treat to make for James to take to work, plenty for work and plenty for home. 🙂

{THE} Rice Krispie Treat

  • 1 (11-12 oz) bag butterscotch chips
  • 1/2 cup peanut butter chips
  • 1 1/2 cups creamy peanut butter
  • 1 cup marshmallow fluff
  • 1 cup (2 sticks) unsalted butter, divided
  • 12 cups (1 12 oz box) crisp rice cereal
  • 4 cups (2 11-12 oz bags) semi-sweet chocolate chips
  • 2 cups confectioners’ sugar
  • 4 tbsp. water

1. Line a 9×13 inch pan with aluminum foil, letting foil hang over edges so that it will pull out of pan easily. Set aside.

2. In a large saucepan over medium to medium-low heat, melt butterscotch chips, peanut butter chips, peanut butter, marshmallow fluff, and 1 stick of butter. Stir to combine. Poor rice cereal into a (very) large bowl. Pour butterscotch mixture over top and stir to combine.

3. Place half of the cereal mixture into the prepared pan and pat down firmly and evenly. Place in refrigerator to firm up.

4. In a microwave safe bowl, melt the chocolate chips and remaining stick of butter together, stirring every 60 seconds. Mix in the powdered sugar and water.

5. Spread the chocolate over the layer of rice cereal and then add the rest of the rice cereal mixture to the top of the chocolate layer. Pat down gently but firmly.

6. Refrigerate for at least 2 hours and then cut with a sharp knife.
